Gabe and I did our 5k this morning.
The goal was to run the entire 3.1 miles.
And we (almost) ran the whole thing.
I started running once a week after school on the treadmill in January. But this summer I really ramped my training up. I've been training hard all summer. Getting up three mornings a week to run before Gabe leaves for work. I was feeling really great until about a month ago when my knee started hurting while I was running. I started icing it after runs, got a new pair of shoes, and got a brace for my knee. Then after my runs last week the pain stuck around longer and was starting to be my entire leg from knee to ankle. After my run on Monday morning it hurt so bad that I knew I needed to rest for the rest of the week to get ready for today's run.
Our run started off pretty good. Then about mile 2.5 the leg pain started. It was so intense I was in tears because my goal was to run the whole thing but I couldn't even walk without pain. So we walked for about a 1/4 mile and then did a run/fast walk to the finish line. At which point I wanted to scream because I could have run the whole thing if my stupid leg wouldn't have quit on me. I was ready! I haven't felt this healthy and fit in a long time. I also wanted to scream because I haven't been in so much pain since giving birth.
I never thought I'd like running. But it turns out I really like it (dare I say love it?). So after I figure out what's going on with my right leg, we're doing a 10k next year for sure. Well, I am at least...hopefully Gabe will decided to do it with me.

Good bye, Summer...
We're sure going to miss you!
Our holiday weekend was spent relaxing and having some fun.
We went down to Salem for the State Fair on Saturday morning.
Levi said the best part was cotton candy.
We did enjoy looking at the animals.
Indulging in fried food. (The bacon corn dog...so not worth it.)
And going on rides...of course!
After about 3 hours we were hot, tired and ready for a nap. We all crashed when we got home!
A holiday weekend is also a good time for Gabe to invite a few friends over to enjoy his amazing Kalua pork, play some yard games, and drink a few beers. Good times!
We also managed to squeeze one more zoo trip into this last weekend of summer.
Baby Lily now gets to play outside with all the other lady elephants. She was having a great time playing with this stick...and bugging her aunties!
And we had great seats on the lawn for the bird show. Several birds (including this owl) literally flew right over our heads. So neat!
We have enough cucumbers to feed a small village. So we decided we needed a way to preserve them a little longer. Pickles! Gabe came across this recipe for small batch fridge pickles, and we thought we'd give it a try.
We don't have pickling cucumbers, so they may not turn out quite as crunchy. We'll hope for the best! This cucumber salad recipe I made for our staff lunch potluck on Thursday was a hit. Just in case anyone else is looking for ways to use their cucumbers.
July and August sure flew by! I guess it's time to say "hello" to the excitement of school, pumpkins and lots of fall color.

Tom's #60
Grandpa Tom turned 60 yesterday!
So we went south to help him celebrate the momentous occasion.
He had a music gig here, so we enjoyed the music and helped harvest the hops crop too!
They "pay" the hop harvest volunteers in beer (or boysenberry lavender soda...if you're Levi).
It was super fun to be with Tom on his birthday.
And we picked a lot of delicious Cascade hops. Next year, when we go back, we can brag about drinking the hops we harvested. And Levi will enjoy more yummy fruit soda!

Blackberries on the Alsea
This weekend we met Grandma Winnie on the Alsea River to camp.
We pulled in very late on Friday because traffic was CRAZY getting out of town. It took us an hour to get from our house to Wilsonville. That's a trip that should take about 20 minutes!
So after some breakfast, we got our first glimpse of the campground and the river. We quickly figured out why the campground is named Blackberry. And Levi shoveled these into his mouth after throwing lots of rocks in the river and catching a really big crawdad. (Actually, Gabe jut reached in and picked him up...But Levi did carry him around on a stick for a little while before we let him go.)
Blackberry campground is 15 miles inland from Waldport. So the weather at camp was nice. The fog on the beach was a different story. It was dense but it wasn't windy or cold...can't have it all when you visit the Oregon coast.
Levi was determined to pick up every single piece of dead crab he found in the sand. Such a typical boy!
Waldport is a pretty tiny beach town (population about 2,000), so we drove up to Newport to have some lunch and check out the sealions.
Other highlights were definately all the little inch worms we found falling from the trees all over our campsite!
And who doesn't love a great s'more?
Certainly not this kid.

There have been some serious birthday festivities happening around our house the last few days!
Levi invited a few friends, and some family, over to celebrate with him on Sunday. (Lots of friends weren't able to make it, so it was a small gathering. I think that's unfortunately how it's going to be for this kid since he has a summer birthday.)
But we still had a "blast".
Lots of balloon rockets were shot off (and are now stuck on the roof)!
Lots of pinata smacking!
Candles were blown out, cake and ice cream consumed!
And of course lots and lots of presents!
It was a fun (and exhausting) afternoon.
Yesterday, Levi and I took our first (and probably only) trip to the aquarium. (It wasn't very good.) Levi does love looking at the jellyfish and he spent a lot of time "petting" the sting rays.
Since the aquarium is around the corner from Gabe's work, we met him at the park down the block and had lunch. And of course, the boys had to shoot off the cool new rocket blasters Levi got for his birthday.
We ended the day with more presents, and taking Gramma and Grampa G out for dinner at Levi's favorite restaurant. (Since Gramma's birthday is TODAY!) There had to be more cake and ice cream too!

lazy days
Levi and I have spent the last few weeks slowing down our summer pace.
I felt like July was packed so full and flew by!
It was time to relax a bit...
So the last few weeks we've had a few play dates, baked multiple batches of these with figs from my friend Jen's tree (obviously they are my new favorite dessert of the moment), had a sports class in the morning where Levi got to try lacrosse for the first time, spent a lot of time making a rocket piƱata and jet packs for a special kids 4th birthday party, met Gabe for lunch at his current favorite burger joint, and had a morning soccer camp.
And here are a few photos of highlights from this lazy week of summer.
*Getting a tux fitting at guys night:
Levi and Gabe are going to be in Gabe's friend Bryan's wedding in Illinois in September. So Levi got to tag along for guys night which included a tux fitting and then dinner at Red Robin.
I'm not sure what's with the Blue Steel Zoolander face. It must just come out the first time you put a nice suite jacket on!

Our friend Jen had her twin boys last week and we got to meet them on Tuesday night.

I can't believe how tiny they are, but they are healthy and keeping mom and dad up at night. Just like all newborns should.

Catching Crawdads
Getting into Indian Creek and catching crawdads with Grandpa Tom and Grammy Joey, is definitely one of the highlights of the summer!
The daddies seemed a little less plentiful this year, but we did catch some of the biggest daddies ever.
Plus, the weather was perfect!
We had a great day on the creek. After just 2 & 1/2 hours (with a break for lunch and beers) we caught 269 crawdads. Which Grandpa Tom made into some delicious crawdad cakes (think crab cakes...YUMMY!)
Levi took the kissing of the crawdad tradition to a whole new level this year.
I'm not sure why this live crawdad is hanging out in Levi's mouth, or why Levi thought it was a good idea. But I am certain he wouldn't be so brave if that crawdad had come out of the creek and not the ice filled cooler. They're pretty slow when they are almost frozen!
Thanks Grandpa Tom and Grammy Joey...we're already looking forward to next year.

Airplanes and Baseball
We had a crazy fun summer weekend! (Except for the big painting project I started Thursday afternoon that's still not finished...)
Saturday we spent the day at the airshow.
Since Levi is so into rockets right now, we thought he'd love all the planes and their cool tricks. Did he ever! Pretty sure his mouth was open in amazement when the Red Bull plane started the show off!
It was a perfect day!
Sunny and warm, with a nice breeze. Clear sky so we could see everything perfectly.
Neither Gabe or I had been to the show before, so it was a neat first experience for all of us.
This little plane actually cut that ribbon while inverted!
Pretty awesome!
And of course you can't forget the jets. The finale of the show!
(Due to the government sequestration, the usual big guys weren't able to be there this year.)
The Patriot Team was a good stand in. It's pretty amazing what they can do!
Everyone had a great time. Even though it was a long, hot day!
Sunday we went to the baseball game with my family.
It was Levi and Elijah's first baseball game!
Levi was really excited for his first baseball experience.
Elijah...not so sure. But everyone is ready for the game to start.
The Hops lost (big time), but we all had fun cheering them on anyway.

Zucchini Recipes
As promised, I'll share the recipes I've been whipping up in an attempt to use the abundance of zucchini from our garden this year. Here they are!
(FYI: Gabe and I think everything has been great, but our little eater has not always agreed.)
*Zucchini Fritters
I loved that I could use zucchini and some of the chives from our garden!
*Zucchini Tart
(from America's Test Kitchen Family Baking)
I don't have a tart pan so I used a spring form pan. I might just have to buy a tart pan so I can make this again! (or just use a pie pan because the tart was hard to get over the lip on the spring form pan)
First, Tart Dough
1 1/4 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
6 tablespoons extra-virgin olive oil
3 tablespoons ice water
Process the flour, sugar and salt together in a food processor until combined. Drizzle the oil over the flour mixture and pulse until the mixture resembles course sand, about 12 pulses. Add 2 tablespoons of the ice water and continue to process until large clumps of dough form and no powdery bits remain, about 5 seconds. If the dough doesn't clump, add the remaining tablespoon water and pulse to incorporate, about 4 pulses. (The dough should feel quite sticky.) Press the dough into a tart pan.
Then, Tart Filling
2 ounces Parmesan cheese, grated (1 cup)
1 large zucchini, sliced into 1/4 inch thick rounds
2 tablespoons plus 1 teaspoon extra-virgin olive oil
1 garlic clove, minced
1/2 cup part-skim ricotta
1 ounce mozzarella, shredded (1/4 cup)
Pepper
2 tablespoons chopped fresh basil
1. Pat dough into 9 inch tart pan, pressing it 3/4 inch up the sides of the pan. Lay plastic wrap over the dough and smooth out any bumps using the palm of your hand. Leaving the plastic on top of the dough, put the tart pan on a large plate and freeze the tart shell until firm, about 30 minutes.
2. Adjust the oven rack to the middle and heat oven to 375. Set the tart pan on a large baking sheet. Press a double layer of foil into the frozen tart shell and over the edges of the pan and fill with pie weights. (I don't have pie weights so I just use dried beans.) Bake until the tart shell is golden brown and set, about 30 minutes, rotating the baking sheet halfway through baking. Transfer the baking sheet to a wire rack and carefully remove the weights and foil.
3. Sprinkle 1/2 cup of the Parmesan evenly over the bottom of the tart shell, return the baking sheet to the oven, and continue to bake until the cheese is golden, 5-10 minutes. Let the tart shell cool on the baking sheet while making the filling. Increase the oven temp to 425.
4. Meanwhile, spread the zucchini out over several layers of paper towels. Sprinkle with 1/2 teaspoon salt and let drain for 30 minutes; gently blot the tops of the zucchini dry with paper towels before using. Whisk 2 tablespoons of the olive oil and the garlic together in a small bowl. In a separate bowl, mix the remaining 1/2 cup Parmesan, ricotta, mozzarella, and remaining 1 teaspoon olive oil together and season with salt and pepper.
5. Spread the ricotta mixture evenly over the bottom of the tart shell. Shingle the zucchini on top of the ricotta in concentric circles. Drizzle the garlic-olive oil mixture evenly over the zucchini. Bake the tart on the baking sheet until the cheese is bubbling, 20-25 minutes, rotating the baking sheet halfway through baking.
6. Let the tart cool on the baking sheet for 10 minutes, then sprinkle with the basil. Take the tart out of the pan and serve warm!
*Summer Vegetable Gratin

Gabe and I loved this but it was way too much work to make on a regular basis. Plus, Levi doesn't always love trying new things and it took him 45 minutes to eat the portion I gave him! I really wish we would have had tomatoes from our garden ripe to use...but they aren't quite ready yet.
6 tablespoons extra-virgin olive oil
1 pound zucchini, ends trimmed and cut crosswise into 1/4-inch-think slices
1 pound yellow summer squash (prep like zucchini)
2 teaspoons table salt
1 1/2 pounds of ripe tomatoes (3 large), cut into 1/4-inch-thick slices
2 medium onions, halved pole to pole and sliced thin (about 3 cups)
3/4 teaspoon ground black pepper
2 medium garlic cloves, minced
1 tablespoon minced fresh thyme leaves
1 slice high-quality white sandwich bread, torn into quarters
2 ounces grated Parmesan cheese (about 1 cup)
2 medium shallots, minced (about 6 tablespoons)
1/4 cup chopped fresh basil leaves.
1. Adjust the oven rack to the upper-middle position and heat the oven to 400. Brush a 13X9 inch baking dish with 1 tablespoon of the oil; set aside.
2. Toss the zucchini and summer squash slices with 1 teaspoon of the salt in a large bowl; transfer to a colander set over a bowl. Let stand until the zucchini and squash release at least 3 tablespoons of liquid, about 45 minutes. Arrange the slices on a triple layer of paper towels; cover with another triple layer. Firmly press each slice to remove as much liquid as possible.
3. Place the tomato slices in a single layer on a double layer of paper towels and sprinkle evenly with 1/2 teaspoon more salt; let stand 30 minutes. Place a second double layer of paper towels on top of the tomatoes and press firmly to dry the tomatoes.
4. Meanwhile, heat 1 tablespoon more oil in a 12 inch skillet over medium heat until shimmering. Add the onions, the remaining 1/2 teaspoon salt, and 1/4 teaspoon of the pepper; cook, stirring occasionally, until the onions are softened and dark golden brown, 20-25 minutes. Set the onions aside.
5. Combine the garlic, 3 tablespoons more oil, the remaining 1/2 teaspoons pepper, and the thyme in a small bowl. In a large bowl, toss the zucchini and summer squash in half of the oil mixture, then arrange in the greased baking dish. Arrange the caramelized onions in an even layer over the squash. Slightly overlap the tomato slices in a single layer on top of the onions. Spoon the remaining garlic-oil mixture evenly over the tomatoes. Bake until the vegetables are tender and the tomatoes are starting to brown on the edges, 40-45 minutes.
6. Meanwhile, process the bread in a food processor until finely ground, about 10 seconds. Combine the bread crumbs, remaining 1 tablespoon oil, the Parmesan, and shallots in a medium bowl. Remove the baking dish from the oven and increase the heat to 450. Sprinkle the breadcrumb mixture evenly on top of the tomatoes. Bake the gratin until bubbling and the cheese is lightly browned, 5-10 minutes. Sprinkle with the basil and cool 10 minutes before enjoying!
*Zucchini Fusilli
Good flavor (with the addition of some crushed red pepper) but sadly a pretty dry pasta dish.
And of course I've made the classic zucchini bread and also made these zucchini muffins. The muffins were good, Levi especially loved them with a little more honey drizzled over them. Makes them a little less healthy but a lot more delicious!

Sprinkle with 1/2 teaspoon salt and let drain for 30 minutes; gently blot the tops of the zucchini dry with paper towels before using. Whisk 2 tablespoons of the olive oil and the garlic together in a small bowl. In a separate bowl, mix the remaining 1/2 cup Parmesan, ricotta, mozzarella, and remaining 1 teaspoon olive oil together and season with salt and pepper.
5. Spread the ricotta mixture evenly over the bottom of the tart shell. Shingle the zucchini on top of the ricotta in concentric circles. Drizzle the garlic-olive oil mixture evenly over the zucchini. Bake the tart on the baking sheet until the cheese is bubbling, 20-25 minutes, rotating the baking sheet halfway through baking.
6. Let the tart cool on the baking sheet for 10 minutes, then sprinkle with the basil. Take the tart out of the pan and serve warm!
*Summer Vegetable Gratin

Gabe and I loved this but it was way too much work to make on a regular basis. Plus, Levi doesn't always love trying new things and it took him 45 minutes to eat the portion I gave him! I really wish we would have had tomatoes from our garden ripe to use...but they aren't quite ready yet.
6 tablespoons extra-virgin olive oil
1 pound zucchini, ends trimmed and cut crosswise into 1/4-inch-think slices
1 pound yellow summer squash (prep like zucchini)
2 teaspoons table salt
1 1/2 pounds of ripe tomatoes (3 large), cut into 1/4-inch-thick slices
2 medium onions, halved pole to pole and sliced thin (about 3 cups)
3/4 teaspoon ground black pepper
2 medium garlic cloves, minced
1 tablespoon minced fresh thyme leaves
1 slice high-quality white sandwich bread, torn into quarters
2 ounces grated Parmesan cheese (about 1 cup)
2 medium shallots, minced (about 6 tablespoons)
1/4 cup chopped fresh basil leaves.
1. Adjust the oven rack to the upper-middle position and heat the oven to 400. Brush a 13X9 inch baking dish with 1 tablespoon of the oil; set aside.
2. Toss the zucchini and summer squash slices with 1 teaspoon of the salt in a large bowl; transfer to a colander set over a bowl. Let stand until the zucchini and squash release at least 3 tablespoons of liquid, about 45 minutes. Arrange the slices on a triple layer of paper towels; cover with another triple layer. Firmly press each slice to remove as much liquid as possible.
3. Place the tomato slices in a single layer on a double layer of paper towels and sprinkle evenly with 1/2 teaspoon more salt; let stand 30 minutes. Place a second double layer of paper towels on top of the tomatoes and press firmly to dry the tomatoes.
4. Meanwhile, heat 1 tablespoon more oil in a 12 inch skillet over medium heat until shimmering. Add the onions, the remaining 1/2 teaspoon salt, and 1/4 teaspoon of the pepper; cook, stirring occasionally, until the onions are softened and dark golden brown, 20-25 minutes. Set the onions aside.
5. Combine the garlic, 3 tablespoons more oil, the remaining 1/2 teaspoons pepper, and the thyme in a small bowl. In a large bowl, toss the zucchini and summer squash in half of the oil mixture, then arrange in the greased baking dish. Arrange the caramelized onions in an even layer over the squash. Slightly overlap the tomato slices in a single layer on top of the onions. Spoon the remaining garlic-oil mixture evenly over the tomatoes. Bake until the vegetables are tender and the tomatoes are starting to brown on the edges, 40-45 minutes.
6. Meanwhile, process the bread in a food processor until finely ground, about 10 seconds. Combine the bread crumbs, remaining 1 tablespoon oil, the Parmesan, and shallots in a medium bowl. Remove the baking dish from the oven and increase the heat to 450. Sprinkle the breadcrumb mixture evenly on top of the tomatoes. Bake the gratin until bubbling and the cheese is lightly browned, 5-10 minutes. Sprinkle with the basil and cool 10 minutes before enjoying!
*Zucchini Fusilli
Good flavor (with the addition of some crushed red pepper) but sadly a pretty dry pasta dish.
And of course I've made the classic zucchini bread and also made these zucchini muffins. The muffins were good, Levi especially loved them with a little more honey drizzled over them. Makes them a little less healthy but a lot more delicious!

Family Reunion
The annual Rhoten/Girard family reunion took place over the weekend. We went up to camp with the crew after Gabe got off work on Friday.
It was great to see family and spend some time together catching up.
As usual, my dad, Grandpa and Uncle Rupe spent the weekend playing pinochle.
Levi had a good time playing at the little playground by the meeting hall and trying to learn to play ping-pong.
The highlight for me and Gabe was rafting.
My Aunt Nancy booked a rafting trip for those who wanted to raft the White Salmon river.
So, a small group of us rafted the river on Saturday afternoon.
It was awesome!
It's a cold glacier fed river so they make you wear a crazy amount of gear.
And it's a fast river!
A much different experience from other NW rivers I've been on.
About half-way through the trip you have to portage around an 18 foot water fall. But they let those who want to, go over the 14 foot Husum Falls at the end of the trip.
This is the view of the falls from the bridge. Pretty crazy huh?
My cousin Doug and Gabe were the only ones who felt up to it this time. Although, I will be doing it next time we raft this river!

Their whole crew almost made it safely over the falls!
My Uncle Brian got some photos of us along the river route and got some really great ones of the guys going over the falls. I also took video of them going over. I'll have to get back on here later this week.

Goldfish
Levi has now had a total of three weeks of swimming lessons this summer.
And I'm very proud at all the success he's had!
He's an awesome backfloater. He can float without any support from his teacher!
He has no fear jumping into the water either.
Levi doesn't like to put his face in the water and get his eyes wet. But in order to move from the Goldfish level to Penguin, that's an important skill. He's been working hard, and his teacher felt like he's ready to move on to the next level. I think we'll try to take some lessons in the winter or spring so that he can practice his swimming more than once a year! He sure does love it...and it sure does wear him out!

Rockaway Beach
We had a great weekend in Rockaway.
It was my parent's 38th wedding anniversary and they wanted to spend it with family at the coast!
It was sunny...but still windy which made it pretty cold.
We did manage to fly kites.
And spend lots of time playing in the sand.
Grandma and I even spotted a partial moon one afternoon when we were playing in the sand and water.
Guess that smile is bound to come out when your pants are extremely wet!
And this was baby Elijah's first trip to the beach!
It was a great weekend.
